Abstract

The project was developed in the Santo Domingo de los Ts͡chilas province, prepared by the second semester students of the Agricultural Engineering career in 2020, carried out as an integrating project of knowledge established in each semester in the career, where all subjects contribute to the development of research. The objective of the research was to identify the organic composition of foods that guarantee food sovereignty in the province of Santo Domingo. This project is of qualitative, investigative, statistical and descriptive origin, which intervenes in an important way, with it seeks to specify the properties, the most important characteristics of the communities that are subjected to the analysis. Santo Domingo counts between the Santo Domingo cantons 353,196 ha and La Concordia (32,500 Ha), it can be seen that this province has fertile soil, which allows the cultivation of an infinity of products, such as cocoa, banana, yucca, oil palm, passion fruit and bananas that provide 5 essential elements to the human diet carbohydrates, lipids, vitamins and minerals. The product with the largest cultivation area in the area is palm, with a planted area of 52,609 ha and a harvest area of 44,319.87 ha. One of the products that is promoted in the province is the cultivation of cocoa, it has a harvest area of 20,635.79 ha, under conditions of associated and single cultivation. In addition, the results indicate that it is a great producer of milk, beef, chicken, etc., which provide proteins, amino acids and minerals to the human body.
