The objective of this research is to study the organic composition of foods that guarantee food sovereignty in the Lodana parish of the Santa Ana canton, â€in which an exploratory, documentary and investigative methodology was applied where we used various information from bibliographic sources, in The one that we carried out surveys that allowed us to obtain secure information from the farmers of the area and in which aspects such as: the destination of the agricultural production of the parish, the characteristics of the agricultural land, assessment of its PH and the relationship were evaluated with the crops that are being established, the use of chemical products to improve crop yields, the daily work they carry out and whether the edaphoclimatic conditions in the area favor the development of the crops. The results of the research showed that fertilizer is used organic or inorganic to improve planting performance, existing or preference when using inorganic compost, because its process is faster. The crops that are harvested the most are corn as a fundamental food for the economic sustenance of the population, since it fulfills a group of important roles such as the preparation of balanced feed for animal feed (cattle, poultry, pigs and horses) and melon , bean, tomato, peanut and pepper, which provide carbohydrates, lipids, proteins, vitamins and minerals, which make up the 5 essential elements of the human diet, achieving the production of organic foods that do not affect human health and guarantee healthy eating and healthy.
